Join chef, restaurateur, and Top Chef finalist Sheldon Simeon on a culinary journey through the tastes, flavors, and ingredients that make up both traditional and modern Hawaiian foods. Sheldon's love and appreciation for his home state's culinary traditions have taken him from Maui Culinary Academy to opening up his own restaurant on Maui, Tin Roof.
Sheldon will be joined by Elyse Inamine of Food & Wine for a discussion on the tastes of Hawaii before he gives a demo of a delicious Hawaiian dish. An informal reception featuring poké and Brooklyn Brewery beer will follow.

About Elyse Inamine
Elyse Inamine is the associate restaurant editor at Food & Wine where she tracks all things trends, writes stories for print and digital platforms, and produces Best New Chefs. Previously, she worked at Tasting Table as an editor, and her work has been featured on nymag.com, First We Feast, the New York Daily News, and Saveur. When she’s not checking out new restaurants, you’ll find her doing a combination of these things: watching lots of anime, eating Indomie instant ramen, or working on a new fermented project (kombucha is next!).
Pokéworks, the forward-thinking poké brand rapidly expanding across the nation, boasts three NYC locations. The brand recently announced a new collaboration with Sheldon Simeon welcoming the first Sustainable Series menu item: the Coco Bora bowl. Inspired by Sheldon’s Filipino background and Pokéworks’ dedication to offering underutilized sustainable fish varieties, Bora (a light and mild white fish) is mixed with ginger, red onions, Thai chili, and Sheldon’s signature Kinilaw sauce.
